What is French Onion Soup?
French Onion Soup is a soup made with softly fried onions that is then boiled in beef stock or water. It is typically served gratinéed with croutons or with a larger piece of bread topped with cheese. Though the popular version of onion soup originated in the mid-19th century, the dish has been known in France since the Middle Ages.
French Onion Soup is very delicious and have health benefits, in fact, it is a highly nutritious choice. Ingredients:
- 10 medium white onions or 6 large Spanish onions, finely sliced
- 4 garlic cloves, finely chopped
- 4 tbsp olive oil
- 1 tsp butter combined for frying
- 1 tsp salt
- ½ tsp black pepper powder
- 2 bay leaves
- 1 tbsp balsamic vinegar (optional)
- 1-litre stock (beef stock for non-vegetarians or vegetable stock for vegetarians)
- 50g of Parmesan cheese or mozzarella cheese, grated
- 4 thin slices whole grain bread (optional)
Making Process of French Onion Soup:
- In a large saucepan, gently heat the olive oil and butter mixture, and do not overheat and smoke.
- Sauté the onions over medium/low heat until they begin to soften, then add the garlic, bay leaves, thyme, salt and pepper.
- Reduce the heat to the lowest and allow cook the onions for 15-20 minutes, and do not cover until they become soft and golden caramel color.
- When the onions are ready, add the balsamic vinegar(optional) and stock.
- Bring them to the boil and cover, reduce the heat to very low and simmer for 15 minutes.
- Turn off the heat to enhance the flavour.
- Before serving, remove bay leaf.
- Meanwhile, toast one side of the bread under a grill until golden.
- Garnish the soup with toast and top with the grated cheese.
- Grill/Bake for a minute until the cheese is melted and slightly browned.
